Hot Dog Stuffing question
-
Hi all,
When stuffing 26 mm collagen/cellulose/sheep casings for hot dogs, does anyone have any advice on the best size stuffing tube to use with a 5 lb. LEM upright stuffer. The one we have is the 1 inch tube, I can’t seem to find any other tubes around the kitchen. I’ve only stuffed with hog casings before and was wondering if anyone had any insight for a noob.
Thanks in advance!

I use a 13mm, equi. 1/2" tube with 26mm collagen for hotdogs. I think Walton’s has a handy chart toward the bottom of individual collagen spec pages and as I recall they show either a 12mm or 13mm. Either works fine.

@SpicyMeatballz
Go to parts, stuffer parts, click on any tube and at the bottom is this chart:
Casing Size Stuffing Tube Size
15mm 10mm
16mm 10mm
17mm 10mm
18mm 10mm
19mm 12mm
21mm 13mm
23mm 13mm
26mm 16mm
30mm 19mm
32mm 22mm -

For true skinless hotdogs, I like to use 26mm cellulose casings. They are very easy to stuff and then remove them after your ice bath. They should fit on a 1/2 horn nicely.
