I have a camp chef pellet smoker and the lowest temp is 160 - watching video from Meatgistics the starting temp should be 124/140 - what should I do???
Uncle Frank used to call it that and make this all the time and it has become one of my favorites for venison.
- Venison steaks cut into bite size
- Vidalia onion
- Pickled jalapenos
-layer venison, onions, jalepenos in jar
-pour jalepeno juice to cover
-refrigerate for at least 24 hours
-eat on crackers!

AdamCA no, the vinegar from the jalapenos will kill anything. Surprisingly it isnt really that hot either, but the taste is amazing!
