Carrot Binder

The recommendation for 25 lb of meat in the description of the product: “Suggested usage is 4 oz per 25 lb of meat or use as needed to thicken liquids and sauces.”
The recommendation for 5 lbs of meat in the Additive conversion chart is 1/2 cup (8oz) for 5 lbs of meat.
Which is right? -
For the 5 lb of meat on the conversion chart it says .8oz of carrot fiber. I added a 0 in front of the period to make it more clear.

But it also says 0.5 cups. is 0.5 cups or 1/2 cup = 0.8 oz? An online conversion Chart Says:
1/2 cup = 8 tablespoons or 4 fluid ounces. Very confusing. -
chasm907 This is where volume is more confusing than weight. I would go with weight! The volume of a “fluffy” product, such as carrot fiber, could be 1/2 Cup (0.5 Cup) but weigh 4 ounces because the product in/of itself is very light and voluminous. Therefore, using scales rather than cups makes more sense, as professional butchers/bakers/candlestick makers (sorry about that metaphor) will use scales when measuring out ingredients.

Is the binder amount recommendation the same for smoked and fresh sausage? -
@Tim Zenner Well, I dont really recommend carrot fiber for smoked sausage. Use Sure Gel for smoked and carrot fiber for fresh sausage. But, if you are goiing to use carrot fiber then just use the same amount.
