I am going to make some jealous but my local grocery put bone in pork butts on sale for 0.99 per lb

craigrice Yup! You got me! I can’t remember the last time I saw it for less than $2.99! That’s a steal! If I want a deal I gave to drive about an hour in each direction to a restaurant supply/grocery store. I can find boneless pork butt for $1.99-$2.49 regularly but the trip is just an added expense. The ‘good stuff’ from local butchers starts at around $4.99. For pulled I will upgrade. For fresh brats I will buy on sale!

Here in NC I can get butts as cheap as $.99/ lb on sale… but it does take chasing down a deal like that to find it…
I am about to splurge, I have ordered 1/2 pig, Hampshire crossed with Mangalitza… The farmer quoted me $4/ lb hanging weight, and he is going to finish the pig on a semi custom sweet feed…
Joe Hell For pulled, why would you upgrade?

raider2119 I just figure that with the sausages you are grinding everything and adding a significant amount of seasoning and/or other additives to the product, essentially covering up the meat itself. With pulled pork you end up with a product that can really showcase the meat itself. I don’t normally sauce the end product for this reason, or if I do it’s with a light hand.
Generally speaking I buy what’s on sale!

Joe Hell Funny, same thought pattern just heading in different directions… To me, pulled pork gets cooked to death, is flavored with heavy smoke and rub… and while I don’t sauce either, I generally provide a choice of 3 sauces (Eastern NC, Western NC and SC style… )
To be honest, fresh and smoked sausages up till now have pretty much fallen into the same category for me… Price being the main concern…
I would like to experiment with both using better quality pork, but at least with the first pig, every bit of it is already spoken for to do charcuterie…

raider2119 I have to store meat at my folks house which runs the risk of dad getting into it. lol. I’ve had to turn down gift meat lately due to running out of room.

Joe Hell If you have to turn down “FREE” meat, that just means Dad hasn’t been holding up his end of the bargain keeping that freezer cleaned out for you. Sounds like he needs to get a couple dozen of his closest friends together for a 4th of July BBQ…
Can’t say I ever had that problem… I was the one that raided my Dad’s freezer for a couple of his pastrami’s… The man was the undisputed KING of Pastrami…
