Yes I use a vacmaster chamber for almost all my SV it works great hardly ever floats

Never have i ever tried sous vide, has anyone done the butter sous vide? How is compared to traditional sous vide?

I haven’t tried that method but I just might try it this weekend. This guy did a good comparison.

Joe Hell its interesting, thank you. I watched a video that my friend tried last weekend. They never put it in a vac seal bag. Just melted a whole tub of butter and submerged a tbone in the butter slow cooking it. Then put it in some type of sear unit. All sous vide vids that i have seen which isnt many always used a vac seal bag.

twilliams Ah…butter poached steak! I haven’t tried that one either. To do that I would clarify the butter first. I might have to try that one too!

I think your question might be a little misleading or i’m reading it wrong. I’ve done sous vide for several years. You do not sous vide “in” butter. You may add butter to the bag to be sous vided. I pre fere no added butter to the bag. Hope this helps

I thought he might have been combining Sous Vide and the Butter aging? For anyone who doesnt know that is when you put a THICK layer of butter on a cut of steak (usually a subprimal) and sit it in your fridge to age. Has anyone here tried that?
