‘Sausage’ can be prepared in a fresh style or dried/aged. Brats are fresh sausages. Both will have specific seasonings that are used traditionally. Both are tasty!
Pork Butt yield when using for sausage

Does any know the yield for a pork butt used in making sausage. I see many yield estimates for pork butt used for pulled pork but not when used for sausage.

geraldr622 are you asking for meat to fat ratio or percentage of meat trim, after I cut the meat I weigh it on my kitchen scale to estimate additives , meat to fat varies 30-70 maybe less depending on how it is trimmed when you buy it

geraldr622 If you are asking about how much pork you get to make sausage vs the bone then I always buy about 10% more than I need as I figure I am going to lose about 5-10% in the weight of the bone and meat that I either dont want to spend the time taking off the bone or pieces that I don’t want to use because of fat oxidation or some other visual defect.
