Jonathon I haven’t tried that either but I was planning on doing beef navel pastrami one of these days.

I am currently without heat at my place and it’s pretty chilly so I figured I could break a sweat by spicing up a burger. For the burger I used ground Corriente, Jalapeno Patty Mix and High Temp Cheddar. I used the Weston Automatic Patty Maker attachment on my 11lb stuffer and they turned out gorgeous. To assemble I buttered and toasted a Kaiser roll, Lettuce, Mexican Crema, Pickled Jalapeno, spreadable Habanero Feta and homemade fermented chili sauce. It’s been about 45 minutes and I can still feel the heat!
