  • Is there any way to make Snack Sticks more like Slim Jims that have a harder chew?

    coolman31 So, are you wanting to make a snack stick slim jim size but that has a harder chew? Or are you saying make a product like a slim jim which already has a hard chew?

    If you are looking to increase how hard the chew is remove water. you can do that by either adding less water or running a longer drying cycle at the end of your smoke, or just toss them in a dehydrator.

    Now, if you add less water just know that your stuffer is not going to like trying to stuff into a small 17mm casing. When using 17mm or smaller we suggest adding more water to make the stuffing process easier.

  • I think I’d rather make a Slim Jim. I tried the dehydration method but it didn’t work well.

    coolman31 They obviously have very specialized equipment to be able to get such dry meat into such small casing. If you are wanting it harder the only way I know how to go about that would be to cook them more. Maybe try cooking a batch all the way up to 170°?

  • I tried that and went to 190 with no luck, I think it will need different ingredients so I think I’ll have to go about this differently. Thank you for your help.
