Taco snack sticks

What is it with taco that is different? It stuffs so fast and beautifully. Comes out of the horn like a water stuffer…so nice. It seams as there is an oil of some sort to help it glide. No change in process on my part

twilliams Let us know what you think of the Taco sticks. I liked them but wish they had a bit more kick. What thinking of adding pepper jack or habenero cheese next time.

Brianh i made a 12.5 lb batch with cheddar and a 12.5 lb batch of ghost pepper and hot pepper mix. Will let you know. So did your batch stuff easier than other flavors? I made pizza flavor last night and went back to stuffing hard again. I couldnt finish the last part of my batch due to the meat blowing past my seal. Gonna buy a new seal and try that. It does seam like the seal is flimsy on one side. I hope the pizza tastes better than what it smells

twilliams I only did a 3 lb test batch and don’t recall any difference in stuffing pressure but hard to know only doing such a small amount.
I liked them but thought they were a bit mild for my taste. I prefer the Tex-Mex with pepper jack cheese.
Hope you get your stuffing issue figured out, I’ve been there and it is frustrating to say the least. I went to smaller, 11lb stuffer for sticks and have had no issues since. That being said, I am fairly new to making sticks.

Brianh well i just tasted the taco, not one of my favorites. It has a bit of tartness to it. It was kinda bland with heat but the ghost pepper and hot pepper batch made it heat up. Id say you would like the hot pepper as its about the heat of jalapeno without the jalapeno flavor.

twilliams I didnt get much if any tartness at all from it, interesting. What was your meat block?

Jonathon same as all my other meat blocks, 12.5lbs venison 12.5lbs ground pork 2qts water
