logjammer *transglutaminase is what Joe Hell is referring too and it can be expensive. Photos are easier from iPhones here but I am getting about 50% luck with meatgistics automatically scaling it down when posting.
Anybody use apple cider vinegar instead of regular vinegar in making chorizo.
Doob46 I’ve only ever used 50 grain which is basic regular vinegar. Seems like it is not uncommon though so I’d say you should be okay to test it out!
