I have a kid that will not eat chicken,yet will eat Tyson chicken pattys. I was wondering if I ground my own chicken what would be a good binder to use to help form the pattys so I can bread them.

smokin greg Carrot Fiber is what I use when I am making chicken sausage, no reason it shouldn’t work here. Are you using breast or thighs? If you are using breasts you might consider using some Cold Phosphate to percent it from drying out too much during cooking. And speaking of cooking, I wouldn’t do it on the grates of a grill, either a skillet or a pan or something. If you are using thighs there should be enough fat to help keep them together, though I would still probably use a skillet.

smokin greg Okay, if you are going to use both then I’d recommend the carrot fiber. You could use sure gel but I think that might be a little bit of overkill honestly.
