Well its a good thing i didnt order hi temp cheese or something else that is fridge sensitive. I ordered friday and was expecting a tuesday delivery. Im assuming it got held up by UPS due to the civil unrest again. This world has got absolutely crazy. This is not any wrong doing by Waltons, it was shipped as usual. Just making some aware that may be shipping through Wisconsin that there may be a delay. Everyone stay safe

I don’t have any experience with Hi temp cheese, but i have to ask, are you sure its not shelf stable? I only ask because there are a lot of cheeses that can be stored at room temp. Like those holiday summer sausage and cheese trays/packages.

mikemikemike from what i understand it is ok for a couple days to not be in the fridge as Waltons typically uses a foam cooler and ice pack to keep it cool during shipping. They make sure to ship it on a day that it wont sit on a dock over a weekend. However with it being in the 90’s and on a UPS truck for any length of time i would be concerned. So no i dont believe it is shelf stable as the cheeses you are referring to

You might be right. I guess i always assumed the store bought sausages (even the fresh ones) had cheeses that are processed out the ying yang. But without looking into what you bought from Walton’s i will just bow out of this convo. Good luck.

mikemikemike but like i said in my post, i did not buy the cheese. I bought the Gyro seasoning and smokehouse cleaner. I was just giving a heads up to other people that may want to order the cheese that would be shipping to or through Wisconsin

Hi guys, in the summer months we DO hold cheese orders to prevent them from being held in a UPS warehouse that can reach well over 100°. Ther cheese will be fine for a decent amount fo time out of a fridge but we have seen the constant high temperatures degrade the quality of the cheese when it is held over the weekend. Som,e areas in the country are 4 day shipment (North East and Some areas of the northwest) and it will be fine for that. In the cooler months we don’t worry about holding them for the weekend.

Jonathon This is just FYI (not a complaint by any means). I did order some hi-temp cheese recently. It was in the cooler with the cold pack, and both the cheese and the cold pack arrived rather warm (I wouldn’t say hot, though). This was only a 2-day shipment, but it did get the pleasure of riding around on a UPS truck all day on a 100 degree day (delivered around 7:30 PM), so I imagine that something to do with it.
Again, this is not a complaint. I just wanted to let you know a result. As best I can tell, the cooler and cold pack did its job, but maybe just enough.

Chef I froze the ghost pepper cheese, and it turned out just fine.
In fact, I recommend freezing it. When you take it out of the freezer, it’s easy to separate the pieces from each other, and they stay separated. Just bust it up some with your hands. The other (i.e., first) time I used hi-temp cheese, I didn’t freeze it, and the pieces clumped up a good bit. That made it difficult to get it evenly distributed through my mixture. The frozen, separated stuff mixed in easily.
Plus, it helps keep your meat cold.

TexLaw Make sense to me. From culinary training, one just never freezes cheese Food 101, I haven’t experiment, just what I got from training. Was told that once you freeze a cheese, it doesn’t melt properly and it looks like it 'broke" when cooked.

Thats not true. I freeze mozzarella all the time and it melts perfectly fine when thawed. I can’t speak for the Hi temp cheese in question though.

Chef mikemikemike I’ve done two batches of Summer sausage with the hi-melt cheese. One with Swiss (that had not been frozen), and the other with ghost pepper (that had been frozen). I couldn’t tell any difference in how they came out in the final, cooked product.
For that matter, I’ve frozen cheese and then melted it on a pizza, and it’s come out fine, too. I’m sure there are some cheeses that you wouldn’t dare freeze, but I’ve not had problems with the few I’ve frozen…

Chef I freeze mine in between uses and we keep it frozen here. I actually think it does better through the mixing process (for cured sausage) if frozen.
TexLaw Stiocking up in the fall is going to help in a few ways, A) you’ll get it colder but B) you’re gonna get a better price if you buy in bulk and wont have to pay multiple shipping fees, so good plan!

Just an update on my order that has been delayed by the UPS. It still hasnt showed up, and they have no idea when it will be delivered. They(automated messages) said they will update status when available. I dont think the hurricane had any thing to do with this did it? I thought it was the Kenosha civil unrest but now im questioning something else happened. Jonathon Austin is there anything you can look up on your end to see whats going on?

I will look up the info, send it to Daren, our Customer Service Manager, and I’ll have them figure out what is going on. -

twilliams We are sending out a free replacement today. Our CSR team had no luck getting any additional info.
We’ll get things shipped out and then we will try to get a lost package claim filed with UPS and we’ll deal with whether they will accept it or not.
If you do end up getting the first package, let us know though. -
Austin sounds good, i seen the replacement order come through on my email. I appreciate it. I will definitely let you know if i get the other shipment and will make it right with you. Super excited to get those gyro brats made up. Which means i better order some casings, guess i cant make brats without those.

Sorry to hear your order got lost. I recently placed an order (i think it was a friday) and had it the following Tues. Not bad for how cheap the shipping was for a 15lb order.
