Salami recipe vs Summer sausage recipe?
It looks to me like the Salami recipe is different from the Summer sausage in that for Salami you don’t use Sure Gel as a binder but use Carrot fiber and Cold phosphate instead. Can anyone confirm that? We will be using a Venison Pork combo. First time making both so any other advice appreciated. Thanks.
krohloff If you are making venison and pork I would use sure gel and no phospate. Any time I am using wild game with pork fat I always use sure gel as it is, in my mind, the best binder and it deffinitely helps the most with protein extraction.
