glen I would second this. We make several no sugar products in our plant and i would say this should be fine.
Andrew B. I would run with the current salt content. If its good 5lbs will be gone quick and if its not well its only 5lbs and the next batch can be tweaked!
Cure shelf life

I keep all my Walton’s mixes in the freezer inside ziplock bags or plastic jars, the same with the pink cure, double bagged. Is there a suggested use by date?

deweymeats around 2 years for seasonings, probably a little longer for cures.
Keeping the seasonings out of the light, dry and air tight should give you max amount of shelf life. I’ve had 1/2 bags seasonings vacsealed and used 12-16months later and they were just fine.
