Only use fresh for breakfast links. Slow heat, cold pan or simmer in a little water to bring the meat temp up and then brown. Depends on the mood 🤔

Do I poke holes in celulose casings before smoking?

Nope. they are permeable so smoke will pass. Also, I think if you poke holes they will possibly split when cooked. I make a lot of bambi dogs and have never had a problem

You will love that casing. Its all I use for dogs. The only downfall is it is hard to link. Either tie off with twine or learn to euro link. It tends to come un twisted quite easy.

Learner Yup, I agree with smokinbubba casings are awesome. I made a large batch of pheasant pepperoni with them and I love those sticks. Even though 26mm is too chunky to be called a stick, they are still good!
