This buckboard bacon is probably the best canadian bacon ive ever had. If Belly wasn’t so expensive, i would probably cure my own, but its cheaper to buy it already cured which really makes no sense.
I purchased Imitation Bacon #2 to try with venison. I have pork butt to add for fat. I’m asking for recommendations on the ratio of venison/pork butt.
50/50 would work best

I usually go 40 venison and 60 pork butt

I have tried a 50/50 mix but the 40/60 is a much more moist sausage
