Jonathon The product tightened up overnight in the fridge and the crumbly texture turned into a more homogeneous texture. Not exactly what I wanted, but much better than the day it was processed.
As for the mixing, it was a shot in the dark I kept mixing it until all of the meat seemed to be one large sticky lump. Next time I will check to see that it stretches instead of breaking into two lumps.
I did not use any ECA, nor did I use any binder agent. I have used powdered milk in the past, and will add it to the next batch (probably tomorrow).
At any rate, it is getting there. I did not expect perfect results overnight, but on a positive note the keilbasa I made yesterday was cooked up for dinner and was the best I have ever tasted.

1st time making snack sticks with sure gel. For every 1lb of meat how much water do you need to add?
Making both willies and bbq smoked and adding seasoning and sure gel per waltons conversion chart.
Meat will be 6 lb pork butt mixed with 3 lb beef bottom roast. In making the sticks but do not know how much water to add. Any advice would be greatly appreciated. Thanks

Jesser sorry. I just looked at my recipe and I use 3 cups for 25 pounds of meat.
Jesser I go with 2qts for 25lbs or 1 qt for 12.5 lbs cold distilled water
kyle your distilled water add falls in line I think equals 1 oz water per 1 pound of meat. 25 lbs equals 25 ounces.
1cup equals 8 ounces, 3 cups equals 24 ounces. You claim you use 3 cups for 25 lbs meat.
That has been my rule of thump 1 ounce of distilled water to 1 lb of meat on all my sausages and sticks but have never factored in sure gel.

twilliams that is 64 ounces of distilled water for 25 lb of meat. 2.6 ounces to 1 lb of meat.

Jesser I dont use distilled water. I use tap water but I live in the country with my own well so I have good water.
kyle we are also on well water here, great water but just for being uniform I use distilled water. Not sure I can tell any difference.
