I’m planning on taking advantage of time saving method of smoking and finishing off in water bath. Will be doing summer sausage and sticks this way. Wondering if clear smoke collagen can hold up in a water bath also?

I bought the smoked kelbasa mix. First try with this one. Does this has smoked Flavor in it? I plan on Stuffing in hog casings, should Smoke them too? Do I nred to be careful not to put too much smoke during the cook?

I smoked mine for 7 hours and it turned out awesome. Great smoke flavor. Not sure if it was from the seasoning, the smoker or a combo of both.
