Philly cheese seasoning for summer sausage


  • Who’s used the philly cheese steak seasoning to make summer sausage?

    Can you share your recipe seasoning and cure ratio’s

    I have made it couple of times. I always add 10 to 15% more seasoning when using brat seasoning. Just use the regular amount of cure if it is pork I use soy protein if it is chicken I use sure gel. The ECA and cheese are how ever you like. I have also made them into snack sticks they turn out fine. I always add A table spoon of dried red and green peppers for every2 pounds of sausage, I think it adds to the over all flavor of the sausage.
