They were “okay”, I ended up doing antelope, beef brisket, ghost pepper cheese and pork shoulder with Hot Link seasoning. There was just something different about them that I can’t place a finger on. Was my very first time doing any sausage making.
Can i use ten pounds of ground beef 80/20 to make brats or should i add some pork
medeling32 It depends, I generally like to use pork to make my bratwurst but you can absolutely use 80/20 beef without adding any pork if you want. Just keep in mind that the taste will be a little bit different but I am sure it will still come out great!

medeling32 Yes, normally I use 100% pork. Though I have done 100% beef, a 50/50 mix of beef and pork and even 100% chicken breast. It really comes down to what you want in it. If you are using chicken just remember to use a binder or your sausage will be dry and won’t bind well.
