companies like IBP will back the product up to 30 days from kill date. at work I age hung beef usually 60 to 90 days. but it’s not wet aged.
Pa bulls brisket marinade
Does pa bulls marinade have sodium phosphate in it or do I need to add it for marinating a brisket??? Could smoked meat stabilizer be used also in marinating process of a brisket???
angel4us Yes, Pa’s Black Bull does have phosphate in it so do not add any more as too much phosphate will give it a soapy taste! You should not us Smoked Meat Stabilizer in anything you are going to add water too as it will quickly gas out and could create a dangerous gas, so stay away from that product when marinating!
