AdamCA yeah i used ice water! It sounds like we all have to use ice water and/or pet them in the refrigerator for some time to get the casings to soften. I just wanted to make sure this was the only way of doing it, ie that there wasn’t a way of just bringing them out of the smoker and letting them sit at room temperature for a while. Thanks for the help!
casing came off???

I grilled some fresh sausages today and some of the casings came off…the sausage stayed in it’s formed shape…hum…wondering is this common???..Must say they were tastie!!

Were the sausage casings natural or collagen?A lot of times, high heat will make a casing peel, or over cooking can too. Was your grill really, really hot, and did the casings come off only towards the end of grilling or towards the beginning too?
