I recently made venison jalapeño and cheddar cheese summer sausage. It came out fantastic, my question is if I refrigerate it how long of a shelf life can I expect
scott williams USDA recommends 7 days in the refrigerator and then toss it. If you vacuum pack these you can freeze them for over a year. I recently ate some summer sausage that was from over 18 months ago and once it thawed you’d never know it wasn’t fresh. Key to that is to let is sit out for at least an hour at room temp after the ice bath you will use once it has finished smoking, then let it sit in the fridge overnight before vacuum packing it.
