    • Chicken snack sticks

      Thinking about making buffalo blue cheese snack sticks, using 20 lbs of deboned chicken thighs(grinding the skin in with) and 5 lbs of bacon. I will be using super bind and encapsulated Citric Acid. Anyone have comments/advice? Does this sound right?

      deplorablenc1 B3CDD3E7-350B-454E-9A1C-12D192269EEA.jpeg pulled them off took 15 hours to finish but they look good tried a burnt one turned out ok will post after setting in fridge overnight

      I did a quart bag of jalapeño that were frozen from my garden in a 25 lb batch, could of used more heat but they are pretty good

      Was thinking about making spicy pickle snack sticks, any direction was going to do 50/50 pork but and venison and add some jalapeños and habaneros from the garden maybe add some minced garlic any direction from anyone who has used this seasoning I really like spicy

      I just got some high temp blue cheese was gonna order some buffalo blue cheese snack stick seasoning was wondering if I could put some franks red hot in with it? Any ideas was gonna make it with pork butt but I’m not sure if the vinegar in the hat sauce would cause a problem? I made a batch of buffalo blue cheese before and wasn’t too impressed with the buffalo flavor, I would like to make it like bitting into a hot wing ( I like my hot wings hot and with blue cheese
