It will be just fine, Normally you would get the hide off as soon as possible so the meat will cool faster. I agree skinning it frozen is twice as hard, i would try to thaw it out just a bit, a very sharp knife will help a little

Hello All, I am from Severance Co have been getting tips from meatgistics for a while thought its time to jump in. I have been smoking sticks and jerky for some time and just got a new smoker that i love( PK100). I haven’t tried to many of the seasonings but my first batch of the willies was outstanding i really liked the flavor. Thanks in advance for all the help.!

Mixed it all up put in the fridge overnight 12 hour later stuffed them 19mm casings started them at 120 for a hour 150 for 2hours with smoke 160 then 180 till 155 temp, ice bath, then fridge overnight vacuum packed next day

Greasy in the mouth
just did a batch of snack sticks with 7 pounds deer and 3 pounds pork fat. flavor is great but if you are eating them alone leaves a greasy coating in your mouth. Any thoughts?

I do mine horizontal all the time in my pk100 they turn out great, the only thing i do is rotate the top and bottom rack about half way through the cook time just to make sure they cook even. I lay them across the grates.
