@Tex_77 I’ve done a lot of chickens in my barrel cooker and only use Morton’s Season All (not Season Salt.) A split chicken hung in the barrel takes about an hour and 45 minutes depending on the weather.

New to the sausage making world
I’m Randy from the Butte county area of N. Ca. I’ve been making jerky and smoked salmon for years but thought it would be fun to try my hand at making sausages. I have a Huntrite grinder with stuffing tubes and a Masterbuilt electric smoker. I’ve already made some Italian and breakfast sausages that turned out pretty good. I’ll be doing my first batch of snack sticks with Willie’s seasoning and all the other ingredients I got from Walton’s

How much carrot fiber for 10 lb batch of sticks?
Sorry if this has been discussed before but this is my first batch of snack sticks. The package of carrot fiber I got says to use 1.59 oz up to 3.59 oz per batch. It doesn’t say how big a batch is. The Sure Cure and ECA both have a weight of the meat and I can do the conversion.
